Counter Culture Tasting, August On Ice Series

Had morning coffee at Counter Culture's training center in Somerville, specifically the Idido, an Ethiopian Yirgacheffe, two ways: Japanese iced coffee (flash brew) and cold brew brewed for 16 hours. Lovely washed coffee with nice floral tea-like notes and strong melon flavor.

Recipes: Japanese iced coffee was a ratio of 1:15.4 coffee to water & ice. The cold brew concentrate was 12 oz coffee to 7 cups water (1:4.6), then a 1:1.25 concentrate to water ratio for dilution.

Notes

Repeated yesterday's test, and produced a nice balanced cup. As it cooled, the cream really came through with the brightness of the fruit! This is the final recipe -- I'm going to play with the dose with what I have left and see if 1:16 is still the best ratio.

Lowered the temperature and increased contact time by about 30 seconds versus Test 1. Really nice body and brought out the bright plum notes! I think this might be the cup.

Notes

Made it finer this morning and shortened brew time. Brought back the acidity that was missing from yesterday, but lost some of the clarity that was beautiful the first time. I will admit I'm enjoying the body and it's quite a balanced cup, but I think I need to make a few other adjustments...

More contact time provided nicer body. Wet notes reminded me of coconut! Pleasant stone fruit tea-like quality. More cream, but less clarity and not as bright as yesterday. Might adjust grind size finer and shorten brew time?
