Made a “pseudo” eggs benedict for breakfast since I didn’t have English muffins. Poached eggs; browned shallots, mushrooms, and cherry tomatoes in a white wine reduction; made Hollandaise with butter, white wine, egg yolk, lemon, and salt & pepper; and toasted some bread, put it together with some already crispy bacon.
